Orange-Glazed Flank Steak

It’s really hard to go wrong with marinated, grilled flank steak. This recipe was no exception… simple and tasty. The flavors of orange, lime and honey were delicious together. I served the steak with wild rice and crinkle cut carrots. Dinner was on the table in less than 20 minutes.Get the RECIPE

Stir-Fried Szechuan Steak on Rice (Cooking Light)

Yummy and super-fast! I am putting this recipe in the “make again and again” file. The crushed red pepper added a delicious kick of heat to the dish and the dry-roasted peanuts and snow peas were nice and crunchy. The recipe calls for boil-in-bag rice, but I suggest using an aromatic rice instead. (I used jasmine rice tonight)Get the RECIPE Also… I have only one more Cooking Light recipe left to cook on my list. My next round of recipes is all going to be stuff my husband picked for me to cook. So, you can fully expect to see fewer vegetables and more things that resemble pizza and cheeseburgers.
Taco Soup

You can’t go wrong with mexican flavored food, even when you are experimenting. I made this taco soup the other day and it turned out great.Recipe:1 can pinto beans1 can rotel (w/ lime juice + cilantro)1 can corn1/2 onion, diced1/2 packet taco seasoning1 teaspoon garlic, minced1 T vegetable oil1/2 T cornstarch(mixed with 1/2 T water)1/2 teaspoon salt1/2 teaspoon MSGSautee onions and garlic in the oil in a large pot for a few minutes then add the rest of the ingredients, bring to a boil, then cover and simmer on low heat for 10 minutes.(4 servings)
