Project 365 Day 33: Yuzu Kumquat Cupcakes with Yuzu Filling, Citrus Dark Chocolate Ganache, and Candied Kumquat Slices

March 25th 2007 made Explore #259.Those fancy chocolate bars really do inspire me to make things with them. I’ve had an unopened jar of yuzu fruit spread from Trader Joe’s sitting in my cabinet, just waiting to be used. I knew kumquats were still in season and had picked some up yesterday at Whole Foods. I’ve wanted to put them both into some kind of dessert, but hadn’t quite formulated what… until I found the New Tree citron (aka yuzu) and lemon dark chocolate bar. It all fell into place.Cupcakes! Soft, light, vanilla cupcakes with yuzu preserves and minced kumquats in the batter… filled with more yuzu… topped with lemon citron dark chocolate ganache. How could I not try those out?I wanted to also incorporate some of the kumquats into the decoration, but wasn’t quite sure what to do at first. I like the curly citrus zest strips that some people use… but those are phenomenally hard to get off a fruit barely larger than my thumb. I thought of putting halves of them, or strips, but figured no one would want to eat them, and would just pick them off. Finally I decided on some cross-section slices, since they look pretty neat, and candied them to make them glossy and much sweeter.
